A little over a week ago it was National Chocolate Cake Day. I wouldn’t have known this if it wasn’t for the excessive advertising at my local Whole Foods and thank goodness or else I would’ve missed out on an opportunity to try out cake making again. As we all saw from my first attempt I lack all skills when it comes to making cake icing so I opted to cheat on that this time, but enjoyed still feeling challenged by the fact that I was making cake from scratch. I followed the recipe from Cupcake and Cashmere’s Classic Chocolate Cake post minus the icing part. I love sharing my baked goods, so this was a huge cake with enough to spare for basically friends and my neighborhood.
PROS:
- I successfully followed a recipe from start to finish. BAM!
- Both levels of this cake raised in the oven evenly-NICE!
- The cake turned out to be fluffy and rewarding, so it reminded me of childhood cakes.
CONS:
- Even though I used store bought icing, I have no fucking clue how to spread icing on a cake. This shouldn’t be hard, should it?
- Another WTF moment is once both of the cake layers have cooled, how do I stack them? Like should they both be bottom up or topside up? Does that make sense? Argh.
- Not having proper containers to wrap slices up made it a pain to deliver.
Pretty pumped about the cake though and would definitely use the recipe again.
